BURNT GARLIC FRIED RICE

Burnt garlic rice is one of the popular form of fried rice available in Indian restaurents. This rice is an Indo-Chinese recipe. This rice contains different types of vegetables and crunchy garlic. It is a perfect dinner or lunch recipe. You can eat this rice as it is or with any dry starter of your choice or chinese gravy.

Ingredients
For rice
½ cup basmati rice
3 cups water
1 tsp oil

For stir frying
2 tbsp oil
1/3 cup capsicum, finely chopped
1/3 cup carrots, finely chopped
1 large spring onion whites, finely chopped
3 tbsp spring onion greens, chopped finely
8-10 garlic colves, finely chopped
2 tbsp corn
½ teaspoonblack pepper
Salt as per taste
1 tsp soy sauce
½ tsp vinegar or lemon juice 

Method
Cooking the rice
Rinse the basmati rice very well and soak it in enough water for about 20-30 mins. After soaking drain it and keep it aside.
In a pot add 3 cups of water and bring it to a boil add oil and the rice. Cook the rice medium high flame till its 90% cooked.
After the rice is cooking drain it and keep it under running water using strainer and then transfer  it to a pot cover it and keep it aside.

Stir frying
Make sure that all your vegetables are cleaned properly and finely chopped.
Take a kadai heat 2 tbsp oil.
Add  the garlic and cook it on low-medium flame till it becomes golden brown in color. DO NOT COMPLETELY BURN THE GARLIC.
Once the garlic becomes crunchy and golden brown add spring onion whites and cook it for  1 min.
Now add all the other vegetables except spring onion greens.
Sauté the vegetables on high flame for about 5 mins.
lower the flame after 5 mins and add salt, soy sauce and vinegar and give it a good mix for about 2 mins.
Add the cooked rice, salt and spring onion greens and stir fry it on medium- high flame for about 2-3 mins and switch of the flame.
Serve this delicious garlicky rice with your favourite chinese starter or gravy and enjoy.

NOTE:
 1. YOU CAN ADD VEGETABLES OF YOUR CHOICE.
2. DO NOT BURN THE GARLIC.
